A subtle blend of crepe, orange butter and Grand-Marnier.

Difficult to attribute the recipe with certainty to someone and several cooks claim paternity, including the famous Auguste Escoffier who would have created it in 1896 in Monaco (Chef of the Grand Hotel) for the future King of England, Edward VII who was dining with a certain Suzette (actress Suzanne Reichenberg).
The king insisted that the pancakes be baptized with his name ("I am not worthy of it, rather we will give to this exquisite thing, the name of this young person who is with me").
This story is quite probable.
The pancake was not, however, systematically flamed.
This stage has become widespread with the great hours of room service.
The recipe for 4 people:
- 8 pancakes
- 50 gr of softened butter
- 50 gr of sugar
- 4 mandarins
- 9 tbsp of curacao

Make the tangerine butter by whisking the butter and sugar until a smooth mixture is obtained.

Add the zest of the mandarins, the juice of half a mandarin and 1 tbsp of curaçao

Heat the pancakes in butter, spread with tangerine butter and fold in 4, add a dash of tangerine juice

Add a tablespoon of curaçao per pancake and serve piping hot!
