No need to go to a bakery to enjoy fresh apple turnovers! Chef and author Sonia Ezgulian unveiled her homemade recipe at Les Bons Vivants, here it is.

Ingredients

For 3 generous slippers

8 small apples of different varieties

120 g puff pastry

30 g butter

1 teaspoon honey

1 egg yolk

In a sauté pan, put the peeled apples cut into large cubes. Cover and cook over low heat for 15 minutes, stirring often.

Remove the lid, add the butter and honey and cook for a long time, stirring regularly.

This is the secret of these turnovers, a long and gentle cooking that gives the apples that taste like tatin.

Let cool.

Preheat the oven to 220°C. Roll out three discs of dough about fifteen centimetres long.

Top with a generous portion of candied apples, fold over to form a turnover, pinch the edges to seal and place the turnovers on a baking tray lined with parchment paper.

Beat an egg yolk with a teaspoon of water and a pinch of honey (what's left on the small spoon), then brush over the turnovers.

Place in the oven and immediately lower the temperature to 180°C. Bake for 35 to 40 minutes: the turnovers should be golden brown.

Let cool and enjoy the turnovers as a snack
