On Monday, the Michelin guide published a selection of 56 new “good deals” addresses across France, giving pride of place to the “bistronomic” trend and value for money, three weeks before awarding its famous stars.
Concretely, these "gourmet and careful at affordable prices" addresses do not exceed 40 euros for a complete meal, without drinks and more around 45 euros in Paris.
“In an economic context marked by inflation and rising food prices, it is appropriate to highlight this effort,” underlined the international director of the Michelin guide, Gwendal Poullennec.
Often considered as a possible first step towards the first star, according to Gwendal Poullenec it is not, however, a "little star", but addresses "where you can really enjoy yourself".
Brittany, land of Bib Gourmand
The vast majority of these addresses are located outside Paris and the capital region.
For this promotion, Brittany particularly stands out for its dynamism, with 10 new “Bib Gourmands”, followed by the Auvergne-Rhône-Alpes and Nouvelle-Aquitaine regions.
Among the notable trends in this new selection, the continued rise of bistronomic cuisine, this style of cooking which combines bistro classics with gourmet preparation methods.

Among the newcomers: Rosette, a Lyonnais cork in Clichy (Hauts-de-Seine), or the French-Japanese cuisine of Imayoko in Rennes (Ille-et-Vilaine) or La Plage, on the Opal Coast in the Pas-de-Calais.
Traditionally, this distinction with the logo representing the head of a Michelin man, created in 1997, was revealed at the same time as the new stars, but the list is now published a little before the stars.
The complete publication of this selection, including the demotions, will take place on March 18, during the big red guide ceremony, this year in Tours.
